Domaine Cavalier - Sauvignon/Viognier- Saint-Guilhem-le-Désert / Val de Montferrand (organic)

Domaine Cavalier is located in the heart of the Château de Lascaux vineyards, around a Cévennes farmhouse. The blending of grape varieties for these wines gives them a unique identity, while allowing the terroir to express itself. The vines are planted on limestone and sandy soil, and the vegetation is characterised by wild garrigue. There are white oaks, holm oaks, Salzmann pines and heather. On the border between Brouzet and Corconne, the slightly cooler climate gives the grapes optimum ripeness.
An initial floral nose with notes of jasmine and camomile, which then develops into aromas of exotic fruit (pineapple). Very fresh on the palate, with notes of fresh pear. Mineral and well-balanced, with good length. Savory finish. The vineyard has been farmed organically since 2006 and biodynamic practices were introduced 5 years ago.
Grape varieties - Sauvignon: 40% Viognier: 30% Rolle: 20% Petit Manseng: 10%.
Harvested in the morning, the bunches are completely destemmed. The drained juice and the press juice are selected. Cold settling. The vinification temperature is controlled at around 18°C. Aged in stainless steel vats. This wine is matured on fine lees for 3 to 4 weeks.
The Cavalier family settled in Vacquières in the Pic Saint-loup region in the 16th century, where they still live today. In 1984, Jean-Benoît took over from fourteen generations of winegrowers. He developed new terroirs, enlarged the production area and built a new cellar to further improve the precision of the wines. Today, the 15th generation has joined the 14th, perpetuating a family history in harmony with the rich natural environment.
