Château de Lascaux - "Garrigue" 2024 - Languedoc (organic)
A white wine with a very expressive, slightly lemony nose that develops into aniseed and floral notes. The palate offers delightful notes of fresh pear, white flowers and eucalyptus. A slight saline touch on the finish. A complex, delicate and very well-balanced wine.
Roussanne: 40% Marsanne: 30% Vermentino: 15% Viognier: 10% Grenache blanc: 5
Close to the village of Vacquières, the terroir lies at an altitude of 130 metres on a gently sloping hillside facing south-east. The composition of the soil ensures that the vines have a good water reserve at depth, and that the grapes ripen well in this Mediterranean climate. The vineyard has been farmed organically since 2006, and biodynamic practices were introduced 5 years ago.
Pressed after a short cold skin maceration. Native yeasts. Cold settling. Aged in stainless steel vats for 4 to 5 weeks.
The Cavalier family settled in Vacquières in the Pic Saint-loup region in the 16th century, where they still live today. In 1984, Jean-Benoît took over from fourteen generations of winegrowers. He developed new terroirs, enlarged the production area and built a new cellar to further improve the precision of the wines. Today, the 15th generation has joined the 14th, perpetuating a family history in harmony with the rich natural environment.
