Gin is a spirit made from a neutral alcohol and flavored with plants, either before or during distillation, with a predominantly juniper flavor, coriander and angelica. Other botanicals (citrus peel, cardamom, anise, licorice, fennel, etc...) can complete the composition, as well as herbs and spices. Its minimum alcohol content must be 37.5%.
The production of gin began in the Spanish Netherlands at the end of the 16th century before developing in England from the 17th century and acquiring its letters of nobility in the 19th century, with the invention of Gin Tonic. After falling into disuse during the 20th century, it experiences an extraordinary resurgence since the early 2000s thanks to cocktail bars and many innovative distilleries embarking on the adventure of a qualitative gin.
