Appalina - Dealcoholized Chardonnay

A dealcoholized chardonnay with a fresh and elegant bouquet. Its palate is smooth and round, with a subtly woody finish that adds a touch of complexity. It stands out for its aromatic richness despite the absence of alcohol.

Production method: this Chardonnay is carefully dealcoholized, respecting the wine's original aromas and flavors. The vacuum distillation process is divided into two stages:

• Aroma extraction: The wine is passed through a distillation column to extract the volatile compounds (aromas) at a temperature of 30°C, in an alcoholic fraction.
• Alcohol removal: The wine undergoes a second pass to remove the alcohol. The aromatic fraction is then reinjected to preserve the wine's aromatic richness.
