This “Dino Mauzac” comes from plots located in the Upper Aude Valley, between 200 and 350 meters above sea level. It is vinified in small temperature-controlled vats and then aged in barrels for five to six months.
The nose is complex and elegant, with aromas of apple and pear. On the palate, it has a lively attack, a lovely richness and a lingering floral finish evolving into notes of walnuts and roasted hazelnuts.
Renowned for its wines from high-altitude vineyards, the Upper Aude Valley is also Europe's main source of fossils from the last dinosaurs. Rhabdodon Priscus, discovered near Campagne-sur-Aude, had a very narrow snout, indicating that the animal must have been particularly selective in its choice of food, using its narrow beak to grasp the plants and fruits it preferred.
