Flavors of ripe fruit, juicy citrus, and minerality unfold elegantly, supported by a remarkable finish. It has a silky texture and a lingering, harmonious finish.
Aged for 22 months in 500-liter demi-muids and 228-liter barrels (34%) and in 2,000- and 3,000-liter casks (66%)
Founded in the early 2000s under the leadership of winemaker Gérard Gauby, Domaine Le Soula is built on a rigorous philosophy: respect for the terroir, organic farming (certified organic in 2012), biodynamic practices, and limited yields. This approach allows for the production of authentic, expressive wines deeply shaped by their natural environment. Wendy Wilson, who helped found the renowned Domaine Pithon-Paillé, joined Le Soula as manager in 2016: she leads the team and oversees the winery and the 22 hectares of vineyards.
Located in the heart of the Fenouillèdes region, between Catalonia and Occitanie, the estate benefits from a high-altitude terroir. Situated between 350 and 600 meters, it is characterized by decomposed granite soils and a cooler climate than in the rest of the south, which gives the wines freshness and elegance.
