Clos d'Entre les Murs 2017 - Saumur Blanc (bio)
The robe offers an intense and rich golden color.
The nose reveals complex notes of quince paste, baked plums, candied pineapple, blond tobacco, without forgetting the floral and mineral aromas coming from the tufa soil. This wine is all together structured and refined. A discreet menthol note reinforces the very dynamic finish, which shows a superb length.
The Château de Parnay covers 35 hectares. Cultivated in Organic Agriculture, the vineyard is made up of four blocks of plots, all located on an exceptional clay-limestone soil.
The particularity of the Clos d'Entre les Murs lies in its structure: four 2.5 m high surrounding walls and, inside, 11 parallel walls 2 m high and 60 cm thick, planted from east to west. The vine is planted on the north side of the walls. The vines are trained to cross the walls through an opening located 50 cm high to grow on the other side, facing south.
The ingenuity of Père Cristal lies in the use of the North side to take advantage of the coolness and humidity of the soil and the use of the South side to benefit from the heat. The "Père Cristal" trellises always had "the foot in the cool and the belly in the sun". In this way, the vine can flourish and give grapes of an optimal maturity every year. It is this original technique that ensures the astonishing quality of this cuvée.
Proud of this heritage, today's owners attach great importance to this plot of Chenin Blanc, unique in the world. In January 2011, the parcel was classified as a Historic Monument by the Bâtiments de France.
