Château Ollieux-Romanis - Le Petit Fantet d'Hippolyte blanc 2021 (organic)
Château Ollieux-Romanis is a magnificent property located in Montséret, in the heart of the Corbières.
It is Hippolyte Bories, 8 years old, son of the winemaker Pierre Bories, who illustrates this wine which puts the focus on the fruit, while keeping control of its structure. Composed of Roussanne, Marsanne, Grenache blanc and Grenache gris, it is aged in stainless steel tanks and vinified in a natural way: fermentation in indigenous yeasts and no sulfur added before bottling.
The grapes come from a selection of parcels planted with vines ranging from 10 to 40 years old. The nose is marked by fruit (apricot, white fruits and citrus), the palate is generous, with a creamy touch and a nice acidity.
Surrounded by vineyards and olive trees - olivis, in Latin, gives the Occitan word "olious", which became Ollieux - Château Ollieux-Romanis has belonged to the same family since 1860. Following a reunification in 2006, it is the largest private estate in the Corbières, with 67 hectares of vines planted, including the oldest, Carignan, in 1896.
Wine is a family affair here. Jacqueline Bories was one of the first winemakers in the Languedoc at a time when wine was mainly a man's business. Without giving into fashions, she knew how to get the best out of grape varieties that were once considered of low quality: Carignan, Cinsault, Grenache gris, Alicante... In 2001, her son Pierre, after a decade in finance, joined the domaine and proposed new cuvées. The main features of the wines created by Jacqueline and Pierre: an astonishing freshness, a lot of roundness, fruit and minerality.
