Le Chemin “Si vis pacem para vinum” - Terrasses du Larzac (bio)
This cuvée stands out for its elegance and structure. The diverse soils of Larzac, combined with a warm Mediterranean climate tempered by the winds and a significant daily temperature range, give this wine remarkable complexity and depth. 50% stainless steel tanks, 50% old barrels.
“Le Chemin” was founded in 2018. Wine enthusiasts Matthieu Dibon and Franck Launay embarked on a career change—one was a sales director in Bordeaux, the other a lawyer in Paris—to launch this project.
Today, they cultivate 9 hectares of vineyards in the heart of the Terrasses du Larzac (Languedoc), using organic farming methods and practices inspired by biodynamics. The vineyard is worked with a tractor (minimal plowing, frequent mowing to maintain controlled grass cover) but also with horses in rows too narrow for mechanization. Harvesting is done by hand, using 12-kg crates to preserve the grapes as much as possible. In the cellar, fermentation is spontaneous. The lunar calendar is followed for all operations related to racking and bottling. The wines are not filtered during bottling. The only additive used is SO2, in homeopathic doses. Some vintages are produced without any added sulfites when the wine’s profile allows for it.
