Château de Lascaux - "Les Secrets - Patus de Mussen" 2017 - Pic Saint Loup (organic)
Complex nose with floral notes, hints of plum and toast, velvety balsamic, freshness and richness all at once. The palate is full-bodied, airy, elegant and spicy. Notes of cocoa and laurel.
This parcel, set in very gentle hillsides dating from the Lower Cretaceous period, has a subsoil composed of thin hard limestone alternating with brown marl and marly limestone. Erosion has covered them with clay-limestone colluvium, rich in tiny limestone debris, providing the vines with a good supply of summer water. The climate is particularly cool. The vineyard has been farmed organically since 2006, and biodynamic practices were introduced 5 years ago.
Grape varieties Syrah: 80% Grenache: 20%
Vinification and ageing: Manual harvest. The grapes are completely destemmed. Traditional vinification with 30-day vatting in truncated wooden vats. Perfect temperature control. Aged in demi-muids and tuns for 12 to 14 months. Aged in bottle for 8 years.
The Cavalier family settled in Vacquières in the Pic Saint-loup region in the 16th century, where they still live today. In 1984, Jean-Benoît took over from fourteen generations of winegrowers. He developed new terroirs, enlarged the production area and built a new cellar to further improve the precision of the wines. Today, the 15th generation has joined the 14th, perpetuating a family history in harmony with the rich natural environment.
