Château de Lascaux - "Nobles Pierres" 2020 - Pic Saint Loup (organic)
A deep, intense and delicious nose. Notes of ripe fruit, spices (cinnamon) and liquorice. Fresh on the palate, with a fine grain of tannin, hints of thyme and good tension. A complex finish with notes of wild blackberries.
The vines are planted on a soil made up of limestone fragments resulting from the fragmentation of limestone by water freezing in its fractures (‘gelifraction’) and spread out in vast alluvial cones by torrents during one of the last cold periods of the Quaternary era. The vineyard has been farmed organically since 2006 and biodynamic practices were introduced 5 years ago.
Syrah: 70% Grenache: 30%. Traditional vinification, with maceration for 3 to 4 days followed by alcoholic fermentation for 15 to 20 days in conical vats. Aged in tuns for 12 to 14 months, then matured in vats for 3 months before bottling. Aged in bottle for a minimum of 1 year before bottling.
The Cavalier family settled in Vacquières in the Pic Saint-loup region in the 16th century, where they still live today. In 1984, Jean-Benoît took over from fourteen generations of winegrowers. He developed new terroirs, enlarged the production area and built a new cellar to further improve the precision of the wines. Today, the 15th generation has joined the 14th, perpetuating a family history in harmony with the rich natural environment.
