An intense and structured alcohol-free Cabernet with aromas of blackcurrant and sweet spices. Its tannic and persistent palate makes it an ideal accompaniment to regional dishes. A wonderful alternative, serious and uncompromising.
Production method: this Chardonnay is carefully dealcoholized, respecting the wine's original aromas and flavors. The vacuum distillation process is divided into two stages:
- Aroma extraction: The wine is passed through a distillation column to extract the volatile compounds (aromas) at a temperature of 30°C, in an alcoholic fraction.
- Alcohol removal: The wine undergoes a second pass to remove the alcohol. The aromatic fraction is then reinjected to preserve the wine's aromatic richness.
