"La Butinière" rouge - Limoux
La Butinière comes from the best plots. To the west, the oceanic influence and its clay-limestone terraces bring elegance. To the northeast, the Mediterranean influence and its clay-limestone soils provide fruit and power. To the south, the Haute Vallée de l'Aude and its Pyrenean climate convey freshness. These exceptional conditions, combined with meticulous vineyard management and low yields, enable us to obtain the very best grapes for this unique wine. All grapes are harvested by hand. Each grape variety is vinified separately at controlled temperatures, with pre-fermentation cold maceration for Syrah and Malbec, and long 30-day maceration for Cabernet and Merlot. The wines are then blended and aged in French oak barrels for 9 to 10 months.
Raspberry, violet and black cherry aromas express themselves on the palate. They evolve towards velvety notes of red fruit, prunes and spices, with a fine, long finish.
