"Gargantuavis" Pinot Noir 2023 - Pays d'Oc

This "Dino Pinot" comes from plots in the Haute Vallée de l'Aude, between 200 and 350 m altitude. It is aged in wooden vats and barrels, then blended.
Easy-to-drink and aromatic, it offers a nose of morello cherry and red fruit. On the palate, it is well-balanced, round and slightly kirschy, evolving on the finish towards notes of hazelnut and vanilla.
Renowned for its high-altitude vineyards, the Haute Vallée de l'Aude is also Europe's main deposit of fossils of the last dinosaurs. In Latin, Gargantuavis Phyloïnos (70 million years ago) means the wine-loving bird Gargantua.
