Château de Lascaux - "Carra" 2023 - Pic Saint Loup (organic)
A dazzling, highly aromatic nose, with hints of liquorice and blackcurrant. Full-bodied and expressive on the palate. The tannins are supple and mellow. Notes of red fruit, blackberry, blackcurrant and black olive. Hints of juniper. A peppery finish.
Syrah: 60% Grenache: 30% Mourvèdre: 10%. The vines are located in the AOC Pic Saint-Loup. The soil is stony with Jurassic limestone, which results is fine, elegant wines, rich in the characteristics of this unique terroir. The vineyard has been farmed organically since 2006, and biodynamic practices were introduced 5 years ago.
Traditional vinification, with gentle extraction by punching down in concrete vats. Perfect temperature control during fermentation, followed by a gentle rise in temperature during the final maceration. Aged in concrete vats for a minimum of 10 months.
The Cavalier family settled in Vacquières in the Pic Saint-loup region in the 16th century, where they still live today. In 1984, Jean-Benoît took over from fourteen generations of winegrowers. He developed new terroirs, enlarged the production area and built a new cellar to further improve the precision of the wines. Today, the 15th generation has joined the 14th, perpetuating a family history in harmony with the rich natural environment.
