Champagne Bollinger - Brut "Special Cuvée”

More than a hundred years later, the name of this emblematic cuvée from the House of Bollinger still contains all its history. It's a way of imprinting on the label and in our memories what our taste buds already know: Special Cuvée is really very... special. It reflects all the House's expertise, in its ability to recreate a cuvée that is consistent in style and quality every year.
Special Cuvée is made from over 85% of Grands Crus and Premiers Crus from the three main Champagne grape varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is a delicate blend of the expression of a single harvest and a majority of reserve wines, some of which are kept in magnums for 7 to 15 years.
It matures in the cellar more than twice as long as the Appellation rules. The dosage is moderate, between 6 and 7 grams per litre.
On the nose, it has a very complex bouquet with aromas of ripe fruit and spices. On the nose, notes of roasted apple, stewed fruit and peach.
On the palate, there's a subtle combination of structure, length and liveliness. The bubbles are as fine as velvet. Aromas of pear, brioche and spices, with hints of fresh walnut, come through on the palate.
